I wanted to try something like that for a long time. Now I know 3D models can be an issue because they dramatically increase the triangle count to be rendered on a scene, that’s why it’s best no to use those on naturally-occuring blocks that can be generated in very large quantities.
Instead I want to focus on some obvious blocks that are usually (most of the time) player-placed (or rarely generated such as in mines or villages), such as rails, ladders, furnaces, workbenches, looms, … all those non-naturally generated (or very rarely) that could really benefit from a bit more depth (particularly in shaders without POM such as Raspberry, PTGI, Ymir, and Nostalgia as of today 2020-07-09).
Here are a couple of screenshots with a prototype 3D add-on pack I’m designing. I tested that using rails and ladders for now. More will probably come in the future albeit not at top priority. Let me know what you think of it !
